QWhat exactly can be stewed in a Northeast Chinese iron pot stew? Why must cornmeal cakes be stuck to the pot?

Iron pot stew = the soul of a Northeast winter. A large iron pot about 60-80cm in diameter goes straight onto the table, with the main dish stewing at the bottom, cornmeal cakes (guochuliu) stuck around the rim, and a wooden lid on top for braising. Classic iron pot stew varieties: iron pot stewed goose (the highest treatment in Northeast rural areas—when a son-in-law comes to visit, kill a goose; having geese at home shows the family is doing well); iron pot stewed fish (carp/crucian carp/sandao lin, with tofu + glass noodles); iron pot stewed pork ribs (ribs + green beans + potatoes + pumpkin); iron pot stewed chicken (free-range chicken + hazel mushrooms, xiaoji dun mogu). Core techniques: ① The pot must be thoroughly heated before sticking on the cakes (wet your hands to prevent sticking; half the cake is submerged in the broth and half stuck to the pot wall—once cooked, the top half is crispy and fragrant while the bottom half soaks up the broth and turns soft and sticky) ② Heat control—first bring to a boil over high heat, then simmer slowly over low heat, and finally reduce the sauce over high heat. The essence of iron pot stew isn't the meat in the pot—it's the cakes stuck to the pot's edge and the broth at the bottom. Dipping the cakes in the broth = the Northeast people's winter happiness. Serve with suancai (Northeast pickled cabbage, appetizing and cuts the grease).

QDoes Guobaorou use sweet and sour sauce or ketchup? The Harbin faction and the Shenyang faction are about to start a fight.

Guobaorou (Double-Cooked Pork Slices) is a food topic that can cause infighting among Northeasterners. Harbin style (old-style Guobaorou): sweet and sour sauce—made with white sugar + white vinegar, no ketchup; the finished dish is golden in color, crispy outside and tender inside, with a refreshing sweet-and-sour taste. Shenyang style (new-style Guobaorou): sauce made with ketchup + sugar; the color is bright red, the flavor leans sweet, similar to sweet-and-sour pork but crispier. Most Northeastern restaurants in other parts of the country sell the Harbin old style (because the Harbin style is the original). Zheng Xingwen, founder of Harbin Daotai Fu cuisine, invented Guobaorou in 1907 to entertain Russian guests (originally named Guobao Rou; Russians found the character "bao" hard to pronounce, so it was changed to "bao"). Core technique: pork tenderloin sliced 3-4mm thick, coated in potato starch batter (not flour! Flour-fried pieces are not crispy), fried twice—first at low temperature to cook through and set the shape, second at high temperature (70% oil temperature) to refry until golden and crispy. The sauce must be poured on just before serving—it cannot be poured on in advance, or the meat will soften. The optimal window for crispiness is only 5-8 minutes after being served—eat it while hot!
